Last Minute Dinner-Breakfast Casserole!

Do you often have those days where its like 5:00 and you have no idea what you are going to make your family for dinner?  I do ALL the time!  The other day was one of those days.  I had a loaf of French bread that needed to be used up.  I hadn't defrosted any meat and I knew we needed to get some protein.  So, I turned to that amazing quick cooking protein, EGGS, and came up with this yummy breakfast casserole. 

This was made from things I had in my refrigerator and freezer, plus the loaf of bread.  Since I am keeping it real on this blog, I will tell you the bread had a couple spots of mold starting to grow.  I pinched them off and proceeded to use it.  Does that gross you out?  I hope not.  Penicillin is made from mold you know:)  Anyway, I needed to make dinner and I was going to use that bread moldy or not!  It really was just a couple tiny spots.  Please don't stop reading my blog!
 
So, here is how to make it.  You can use non-moldy bread if you prefer.
Tear up your loaf of French bread into chunks and place in a greased 9x13 pan. Sprinkle the chopped bacon evenly over the top.
Mix up the rest of the ingredients, minus the cheese.  Its just eggs, milk, precooked chopped bacon in a bag that I had in the freezer, and some spices.  You could add some onion or peppers or whatever you like in omelets, but my kids wouldn't eat it if I did that.
Whisk it all together and then pour it over the bread.  Press it down with your hand so all the bread gets dunked.  Top with the shredded cheddar cheese (mine was straight from the freezer but yours doesn't have to be).
 
 
Bake at 350 for about 40 minutes or until it puffs up and the cheese looks all delicious.
I served it with strawberries, which tasted yummy with it.  If your kids won't eat it you could always put a bit of syrup over the top.

Breakfast Casserole:

Ingredients:

  • 1 loaf French bread
  • 1/2-3/4 c. chopped bacon (prepackaged or freshly cooked)
  • 1 c. shredded Cheddar cheese
  • 8 eggs
  • 2 c. whole milk
  • 1 tsp. salt
  • 1 tsp. pepper
  • pinch cayenne pepper
  • 1 Tbsp. sugar
  • 1/4c. cream
  • 1/4 c. cold butter, cut into little cubes

Directions:

Tear your French bread into chunks and place in a greased 9x13 baking dish.  sprinkle chopped bacon evenly over the top. In a mixing bowl, beat together eggs, milk, salt, pepper, cayenne, sugar, and cream with a wire whisk.  Pour over bread and bacon.  Press down on bread to make sure it is all wet with egg mixture.  Top with shredded cheese. Dot the top with butter.

Bake in a 350* oven until it is puffed up and the cheese is browned.

    I used a program called Windows Live Writer. It lets you use any font you have on your computer. There is a tutorial on www.thecutestblogontheblock.com for how to change your font in blogger but it seemed really lengthy to me. Good Luck!

  5. I am not opposed to mold. Ryan has a hard time if cheese gets moldy, but I just tell him that all cheese has mold before it is packaged. Plus, he eats blue cheese and you can't cut the mold off of that - gross! I guess I am fine with mold as long as I can get rid of it.

  7. Clever girl to come up with a recipe on the fly. My mom used to always chop the mushy/gross parts off of veggies in the fridge and it always grossed me out, but now that I'm the one having to come up with dinner at 5 o'clock, I get it. I try not to do it, but I get it.
